Salsa Verde Cruda
The Spanish word cruda, means “raw”. To make this tomatillo based salsa, place all ingredients in a food blender for 30 seconds, add salt to taste and your work is done. The result is a salsa that emanates bright flavors of citrus, grass, tartness with a background zing of chile serrano.
This versatile salsa is not just for tacos. I used this salsa as a sauce for spinach-cheese ravioli; I discovered it a perfect match for pasta. Also, goes good with lamb and chicken. Vary the amount of serranos to match the ingredients with which you pair this sauce with. Let’s get started.
Ingredients
1 lb tomatillos, husks removed then washed
¼ medium onion
1 clove garlic
½ to 3 fresh serrano chiles (to taste)
¼ cup water
Salt
Optional
6 sprigs of cilantro
1 tablespoon lime juice
Preparation
Place all ingredients in a food blender for about 30 seconds, add salt and your work is done. If necessary, add water to thin out the salsa.
Note
This traditional salsa is most often made with cooked tomatillos. Boil the tomatillos and you get a sweeter salsa. Char the tomatillos and you get a sweet and smokey flavor. With cooked tomatillos, you don’t get the bright color as in this recipe.
