Food Mill
I use the food mill mostly to make my red chile sauce. It’s a cross between a processor/blender and a sieve/colander.
By using a food mill instead of a process/blender to make a purée, you eliminate much of the chile pod flavorless cellulose skin and you produce a much creamier chile puree. I also use it to make potato and pumpkin purée. Mills come with a coarse, medium and fine perforated disks. I use the medium perforated for chile.
I learned to make red chile the old fashion way – using a sieve with a wooden pestle like the one pictured below. People switched to blenders but I guarantee you a better sauce using a food mill.
