Smoked Fish Tostadas
Think of a tostada as a crispy flat taco; now visualize the infinite possibilities for toppings. In this recipe I top my tostada with smoked fish. Smoked salmon, mackerel, trout or white fish are commonly found in your supermarket or specialty stores, but I prefer smoked Marlin or Albacore when I can find it. So let’s get started making this delicious Mexican seafood tostada.
Ingredients
Makes 4-6
1 tablespoons extra virgin olive oil
½ cup onion diced
1 garlic minced
1 – 2 teaspoons fresh serrano pepper seeded and finely minced
½ teaspoon each diced fresh thyme, oregano, sage and ground pepper
½ lb smoked fish (of your choice), shredded
1 cup diced blackened roma tomato
1 teaspoon capers rinsed and chopped
6-8 olives rinsed and thinly sliced (olives of your choice)

Avocado slices
Limes quartered
Preparation
At medium heat sauté onions 3-4 minutes until transparent and soft, add garlic and stir for 1 minute then add fresh herbs and stir. Add the smoked fish and sauté a 2 minutes. Add tomatoes, capers and olives and cook for 3 to 5 minutes to incorporate the flavors.
Garnish with avocado slices and squeeze fresh lime juice for added flavor.
Notes
I used smoked white fish. No need to use salt as smoked fish is salty.
