Hank’s White Spesso Balsamic Slaw
This is my first exposure to white spesso balsamic vinegar; I tasted and bought some from Rus Mitchell at the Pasadena Farmers Market (Cheese, Balsamic, Oils and Jams). I thought it’s sweetness would be great for a slaw salad so this recipe is a case where the “tail wags the dog”. Spesso is White Acidic Balsamic of Italian Trebbiano grapes with additional Must; it’s very sweet with a good acidic bite. To add tanginess to the vinaigrette I blend some red wine vinegar. You can purchase an array of Balsamic vinegars at Rus’s website “Uncle Berch”.
This time saving recipe works for a large group and it’s great for a self-serve buffet. It’s similar to the cabbage topping I used for tostadas in a previous recipe “Hank’s Fiesta Tostadas”. Let’s get started……
Ingredients serves 4
Prepare
1 ½ cups thinly sliced green cabbage
1 ½ cups thinly sliced red cabbage
1 cup roughly chopped cilantro
½ cup thinly sliced onion or scallions
Optional: 1 teaspoon of very finely minced fresh Serrano pepper
Blend Vinaigrette
2 tablespoons white balsamic vinegar
3 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1 teaspoon grainy mustard
Salt and pepper
Preparation
Toss and Serve
Note
Put this slaw on tostadas, pulled pork or chicken sandwiches; it’s so delicioso.
