Postre de Guayaba


I recently obtained this bite size dessert recipe from Mercedes Jimenez in Guadalajara Mexico.  She really knows the food scene in her city.  When we visit there, she takes me to restaurants that serve awesome unique Mexican dishes from which I get ideas for this blog.  Gracias Meche.

The three ingredients of this recipe originate in Mexico.  Guayaba (guava) is native to southern Mexico and Central America.  Nueces pecanas (pecan nuts) originate in the river valleys of Mexico and central and eastern North America.  Pecans were widely used by pre-colonial residents.  Cajeta is caramelized goat’s milk also known as dulce de leche (milk candy) or leche quemada (burnt milk).  It’s eaten on its own as a sweet or as a spread or filling for breads and pastries.

This mini size dessert is good for buffets, receptions and as an accompaniment for wafers, ice cream or small pastries.  Let’s get started.

 

 

Ingredients

Makes 12 -16

1 16 oz can of Whole Guavas in Syrup

1 3.4 oz can Dulce de Leche 

⅓ cup diced pecan nuts

 

 

Preparation

For ease of use bring the dulce de leche to room temperature.

Cut off, from each guava fruit, the stem tip of the fruit so that it will stand up without leaning or falling.  Cut off the top third. of the other end and save it for some other use at a latter time.  With a small scoop or spoon remove the seeds from the center to create an empty shell  Repeat the process for as many shells as you want.  

Fill each shell with dulce de leche and sprinkle the top with pecans. Serve at room temperature. 

 

 

Note

I cut off the top third of the guava to make my desserts a little larger instead of cutting them in the middle. .Cut them by half if you desire a larger quantity of desserts. The city of Celaya, Guanajuato Mexico is famous for the artisanal production of cajeta.  They use cajeta for many varieties of candy.that’s formed in rolls stuffed with nuts and dried fruits.  Originally cajeta was made with goats milk but now it’s also made with cow’s milk.  The canned ingredients in this recipe may be found in Mexican super markets.
